Kitchen Staples

So everyone who cooks at home has a few things they always have on hand and use on a regular basis. When you're a beginner, you start with a few basic spices and accessories and then add as you go along. So now that I would say I am an intermediate home cook, I have definitely figured out what my staples are.

Garlic (fresh and powder)- The rule in our house is that you can never have too much garlic. Plus, if we're both eating it then it we don't even notice when we kiss. Garlic taste good in pretty much everything and has so many great health benefits! Adding more flavor to my food and not using any fattening or high calorie sauces is great. We use mostly fresh garlic and I throw it in my ninja and 5 seconds later, fresh chopped garlic. When it's for eggs I tend to use the garlic salt. Garlic taste great in burgers, cauliflower mashed potatoes, steak, eggs, etc.

Avocado- Considered a major superfood, avocado has so many health benefits and is delicious. You can add it to breakfast, lunch, dinner and even dessert! We always have a few on hand and it always makes a great addition in health and taste. No, I am not thrilled with avocado shortages (thanks Mexican drug cartels!) but it is worth the high price sometimes to have such a great food on hand. It's even great in smoothies, so weird but true! Plus just slice it, add some lime juice or garlic salt and it makes a great snack

Kitchen Aid Mixer-Really any mixer will do but there is just something about owning a Kitchen Aid mixer. I got mine about a year and a half ago as a birthday gift and I am obsessed! Joey got mine from Williams-Sonoma in Raspberry Ice. I use it for cookies, pie dough, banna bread, whipped cream, dips, etc. It makes life a million times easier and has so many awesome attachments. I want the meat grinder next but that will wait until we do a meat CSA and get a freezer.

Food Processor- I have the Ninja Pulse and am obsessed! It's funny because I didn't use it that much when I first got it and now we use it daily. I use it for chopping garlic to making pesto to making smoothies and even almond butter. With the different attachments it comes with and then the little cup for single serve smoothies/juices, it is a life saver. It is easy to clean, store, and makes prep work a dream. We used to spend forever chopping garlic and doing everything by hand and now it's all done in a matter of minutes. Averaging about $80, it is a great investment!

Spices-I know I already mentioned garlic but there a few more spices that are great to have in your arsenal. Besides, it usually takes a while to go through this and they last a long time so it's not much to invest in great flavor. So try to always have: (himalayan) salt, pepper, paprika, oregeno, chilli powder, and onion powder. Depending on what you like, don't forget basil or rosemary.

Tony Chachere's Original Creole Seasoning- This is my new favorite staple hands down!I know a lot of people are really into FlavorGod seasonings and I will probably check them out but I don't think they can beat Tony's amazing spice blend. No MSG, just a delicious mix of spices to adda kick to any meal. I love it on chicken or in my eggs and I have been adding it to my burgers to make a fabulous dish. We started using Tony Chachere's for the deep fried turkey on Thanksgiving and now I am hooked.

Oils (including Essential Oils)-Keep Olive oil and coconut oil on hand, and even some vegetable oil. I don't like spray in my pans, why have the extra chemicals when you can use olive oil? As for essential oils, they are great for cooking as well. I love using peppermint for baking or adding a little lemon or rosemary to a dish. Pure and simple and a little goes a long way.

 The great thing about cooking at home is that you can experiment and try new things and not worry about being judged. Unless you're a home cook on Master Chef, then good luck! I like being able to find healthier alternatives to some of my favorites meals so cooking at home really helps with that!

I know my friends Samantha and Michelle love their immersion blenders and make great soups so that's on my want list. I also want a new spice rack to hold all the fun spices were acquiring.

Christmas Cookie Bars!

I love baking all year round but there is something special about baking around Christmastime. The music, the fact it's cold outside but warm inside, the hot coco, it's just magical. I love making cookies, cakes, brownies and today I am going to share one of my favorite recipes. It's for those times you feel like something delicious and sweet but can't decide between a cookie or brownie. This happens to me at Panera all the time, I can't be the only one, right?

Well, sometimes you shouldn't have to make Sophie's Choice over dessert, just have both in one! Two desserts with the calories of one means one less trip to the gym to work off the holiday weight.

North Shore Poor's Christmas Cookie Bars!

Ingredients
2 1/4 cups all-purpose flour (Namaste Perfect Blend is my usual go to but I ran out this week)
1 teaspoon baking soda
1 teaspoon salt (any kind is fine but I use Himalayan)
1 cup (2 sticks) butter (unsalted or salted)
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 cup of Fisher Nut Pecans
1 cup of White Peppermint M&M's
1 cup Chocolate Chips
15x10 pyrex baking dish

Directions
1. Pre-heat your oven to 375 degree F
2. Put some holiday music on, I like 93.9FM on my kitchen radio
3. Put the 2 sticks of butter out so they start softening
3. Gather the above ingredients. Feel free to substitute the M&Ms for any flavor they have or even just white chocolate chips. Just use the same amount. It's a personal preference. 
I like my desserts like my man, white chocolate. Ba-dum-bum chsh! 
4. Put the 2 softened sticks of butter, the vanilla, and both the sugars in the mixing bowl. 
If you're using a mixer/kitchen-aid, I put it on the low speed to start then one higher for a few minutes
5. While that is slowly mixing, grab another bowl
6. I like using a sifter so I put that in the mixing bowl and add the flow, salt, and baking soda. Sift.
7. Are you having hot chocolate or a glass of wine? If not, grab a drink and sing along to the music.
8. Go to the bowl with the sugar and add one egg and mix.
9. Add the second egg and mix
10. Grab the flour mixture and slowly add in
11. Taste a little to make sure it's delicious
12. So you can use the M&M's whole but I like to crush mine up a little. So I just poured them into a bowl and used the back of the measuring cup to crush them. Not fancy but it works well and makes no mess. 
13. Add in the nuts, chocolate chips, and M&M's
14. Beat on low for a minute or two
15. Get your baking dish out, I use a pyrex but any will do
16. Here's the biggest secret of my baking success...Crisco! I don't use it in my baking but I sure as hell use it to grease up my dishes and muffin pans. Take the Crisco and put all over the dish, including the sides
17. Put the dough into the pan, spread even with a spatula
18. Bake for about 20-22 minutes. The sides will be brown like a cookie and the top should be golden brown as well.
19. Cool for about 10 minutes and if you want, add an M&M to each piece you plan on cutting. 
20. Wait another 20 minutes or so and then cut!

 You can really modify this recipe which makes it really fun and a great staple for your  cooking repertoire. You can add coconut, peanut butter, different nuts, or simply add mint  chocolate chips instead. Having a nice glass of Pinot Grigio always helps as well. Plus, to keep from these all myself I plan on letting JoeyWaffles bring them to his work and share. We can keep a few at home but no need for temptation!

Monday Must Haves!

Monday Must Have's is something that a lot of people participate in and I decided that NoShoPo will be no different. So enjoy the first of (hopefully) many North Shore Poor Monday Must Have's. It will be a mix of things you can buy, watch, experience, things I just like, etc.

The Worlds Best Banana Bread Recipe I had some overripe bananas and decided it was time to make some delicious banana bread. I added dark chocolate chips,  a teaspoon of cinnamon, and some brown sugar on top and it was AMAZING. JoeyWaffles has something to eat with his morning coffee and I found the only banana bread recipe I'll ever need. Easy to make and the house smelled glorious. Benefit Cosmetics Advent Calendar I already emailed this to JoeyWaffles as a pre-holiday gift. He get's stumped on gift giving, even though he gets me things all year, so usually we make lists for each other. This way we communicate what we want and it's still a surprise because we give a bigger list then we are going to get. This is top of my list because I love all things Benefit and these would be get things to travel with and keep in my purse.

Criminal Minds Marathons Because sometimes they can't all be about Law & Order: SVU, as much as you want them to be. Not just because you miss all the Elliot episodes no matter how good Danny Pinto can be but because Criminal Minds is amazing and thanks to ION you have just figured it out. I am pretty much obsessed with this show about the BAU (Behavioral Analysis Unit) and love the character relationships. Starting at season one, while watching season 10 and it isn't even weird. If you aren't watching this, you should be.


This weekend I made the above mentioned banana bread and some inside out carrot cake muffins (the frosting was on the inside) so my beautiful Kitchen Aid mixer got lots of love. We resurrected the Keurig for some Saturday morning coffee and breakfast at home. I cuddled with Bella and Dante, went shopping with a good friend, hung out with my Grandma at the nursing home and enjoyed a great Jeep ride Sunday. Went thrifting and grabbed 3 sweater and some books for under $18. Found two fun dresses at Forever XXI...this one is really cute and was on sale for $12.

Living well doesn't have to mean living large. It's the simple pleasure that bring the most happiness to my heart. A warm cup of coffee while curled up with JoeyWaffles and a warm blanket. Driving on a gorgeous fall day with the Jeep top down and a great song on the radio.

Falling Into the Season

I love fall. I loves pumpkin spiced lattes, boots, the crisp weather, saying the word 'crisp', well...you get the picture. Thanks to the interwebs freaking me out about PSL giving me cancer(yeah google that shit, kinda scary) I have been drinking cinnamon dolce lattes with soy and whip (I like no dairy usually but whipped cream cannot be ignored). Fall in Chicago is pretty breathtaking and I am hoping we can actually commit to a season because we had no spring and a weird not summer summer.

Friday night I made a mixture of the Pioneer Woman's chili with some help from Jamie Deen. So delicious. I added coco powder, cinnamon, a Sam Adams Oktoberfest beer, and a jalapeno. Made some Bob's Red Mill gluten free cornbread muffin mix and an Angry Orchard cider and life was real good. 

Saturday was a huge score at the garage sales. Joey Waffles and I had to have hit up at least 15, some duds, some pretty amazing. Also went to my first estate sale, not so great but won't stop my from trying again in the future. We supported C.A.R.E in Evanston by going to their rummage sale first and I got a new litter box, car seat booster thing for Dante and a picture frame. By the end of the day, I had 2 more frames, a mini muffin top pan, a sewing machine, and a vintage tray with flowers on it. Oh, and a corkboard.

Thanks to pinterest, I found inspiration for my office and used thisthis, and especially this to help me DIY my new frames. With some metallic spray paint from Home Depot and some fabric from JoAnn fabrics, I now have a beautiful corkboard, a frame to use over a dry erase calendar and another I am not sure exactly what to do but it'll look pretty. Grabbed some extra fabric to make curtains to hide Joey's random junk on the bookshelves and a matching seat cushion for my chair. Pictures soon of the rest but here's the corkboard:

I spent Saturday night at the rehab clinic/home my Grandma is currently staying at and had a great time with her. We talk and laugh and play scratch off lotto and watched the new Lifetime Movie Deliverance Creek which was a departure for Nicholas Sparks but I absolutely loved it. I hope they make it into a mini series because I love a show with a strong female lead and a great plot.

Sunday JoeyWaffles and I went to Kauffmans for bagels, Starbucks, and then Home Depot. We are so yuppies in our 30's but whatever whatever I do what I want. We bought mistake paint at $9/gallon for our bathroom and the new laundry room, which will apparently be a bright lilac. Then CarlitaRosita and I went on a lady date to JoAnn fabrics, Sears Outlet, and the grocery store. Who knew Sears even had an outlet and what great sales they had? Not me! I snagged a cute ress (olive green with light pink hearts) and a fall skirt along with a pair of gloves with the thumbholes cut out for $7.92. Who says you can't be a baller on a budget? NoShoPo for life #noshame.

We also cooked steak, steak fajitas, chorizo burgers, chicken kabobs, salmon, chicken thighs, chicken leg quarters, and then I baked these yummy carrot cake muffins (sans the cream cheese). I love that we can cook for the week, be healthy, spend time with each other, and save money. It's all abut balance and I am loving what we've got.

This week's goals are:

  • Completing the laundry room by Saturday for the washer/dryer delivery. 
  • We have to put the new vessel sink and vanity in the bathroom and lay down the new tile. 
  • Sewing my curtains/making the sea cushion/finishing touches on my office
  • Sign up and study for the GRE
  • Work out 4 times
